I got this recipe from a lady in our ward and every time I make it for something, I always get at least one person asking for the recipe, so here it is for everyone. Just like any potato salad recipe, the measurements aren't exact so just make it kind of how you would like it. The idea is that it's everything that goes in a baked potato.
- Bake some potatoes (either in foil or not) - leave them a little on the al dente side
- Let them cool down all the way on the counter then cube them with a knife and leave about half the skin on
- While the potatoes are cooling, cook a pound of bacon
- Mix together:
- Potatoes
- Bacon
- 1/2-3/4 cup sour cream
- cube of melted butter
- green onions (you may saute them in butter first if you wish)
- grated or cubed cheese
- Let sit in the fridge for a while so the flavors can meld together and it's cold
